Spinach Strudel

Ingredients
1/2 c chopped onion2tbsp oil10 oz package frozen spinach4 oz feta4 oz fat-free cottage cheese1/4 c parsley3 eggssalt and pepper6 sheets phyllo
Directions
Preheat oven to 350

saute onions in oil, set aside to cool. Mix with spinach, feta, and cottage cheese, and parsley. Mx in eggs, and season with salt and pepper.

Layer phyllo dough with some butter flavored spray. Place mixture on one end, and roll. Bake for 30-40 min.
