Sweet Potato Muffins

Ingredients
5 cups flour1 cup sugar1 tablespoon baking soda1/2 teaspoon salt1/2 cup melted butter1/4 cup oil2 cups mashed sweet potato2 eggs1 1/4 cup milk (could also use buttermilk, I used 2% with a small bit of vinegar added)1/4 cup wheat germ
Directions
Mix all the dry ingredients and wet ingredients separately. Add wet to dry and combine till dry is just wet. For best results don't over mix.
Bake at 375 degrees for 20-25 minutes.
