Banana Bread with Dried Cranberries and Clementine

1 and 1/2 cup all purpose flour1/2 teaspoon baking powder1/2 teaspoon salt1/4 teaspoon cinnamon3/4 cup cane sugar or granulated sugar1/2 cup applesauce (equivalent of 4 ounces)1 large egg2 bananas, ripened, mashed1/2 cup dried cranberries (equivalent is Craisins)1 clementine, peeled and diced
Preheat oven to 350 degrees. Spray a 9x5 loaf pan with cooking spray and flour and set aside.
In a small bowl mix together the flour, baking powder, salt and cinnamon.
In a large bowl mix together the sugar, applesauce, egg, bananas, cranberries and clementine. Then mix in the flour from the small bowl and combine. Do not over mix!
Pour into prepared loaf pan and bake till a toothpick comes out clean in the center. This could take anywhere from 40-50 minutes as ovens vary. Allow bread to cool in pan for 5-10 minutes, then carefully take it out of the pan onto cooling rack. Once cooled, slice and serve.
Serving Size: makes 20 small slices
