4 tsp rice bran oil2 cups dried navy beans, soaked and cooked (or 6cups cooked or canned navy beans) (drain and rinse canned beans before use)2 onions, finely diced2 cloves garlic, crushed3 (400g) tins of chopped tomatoes in juice1 cup water8 tsp golden syrup4 tsp blackstrap molasses1 bay leaf1/2 tsp ajowan seeds, crushed (optional - these help reduce gas)1/4 tsp allspice2 tsp dry mustard (increase to 4 tsp next time)1/4 tsp liquid smoke4 tsp apple cider vinegar
1. Fry onions and garlic in the oil in a large cast iron casserole dish, until golden brown.
2. Add all other ingredients and stir well
3. Simmer over low heat for about 2 hours.
You could also bake this in the oven at 160 degrees celcius, provided your casserole has a tight lid and you check often to make sure it doesn't dry out - or reduce the water to 1/2 cup and cook in a pressure cooker all day.
Serving Size: Makes 8 servings of about 1.5 cups each.
