Ingredients
Olive Oil, 1 to 2 tbsp (I used about 1.5, eyeballed)Onions, raw, 1 cup, chopped 1 pound Black-eyed peas, soaked over nightSwanson Chicken Broth 99% Fat Free, 4 cup Garlic, 4 cloves (to taste)Cured Ham, 1 cup Turkey (dark meat), 1 cup, chopped or diced Salt & Pepper to tasteThyme, fresh, 2 tsp Bay Leaf, 1 to 2 leaves
Directions
Saute onion and garlic in olive oil for a few minutes. Then add meat. Saute for a bit longer. Add broth and peas and seasoning. Bring to boil. Reduce to simmer, cook about 40 minutes, stirring occasionally.
