Ham Bean Soup

Ingredients
Contents of 15 bean soup mix1 lb ham, choppedHam bone1 c onion,diced15 oz can of diced or stewed tomato1 tsp chili powderJuice of one lemon1-2 cloves garlic, minced
Directions
Soak beans in 2 qts (or more) water for at least 8 hours,or overnight.
After soaking,drain water, add 2 qts water, bone and meat. Bring to boil, reduce heat and simmer for 2 1/2 hours. After simmering, add onion, tomatoes, chili powder, lemon and garlic. Simmer another 30 minutes.
Add spice packet included in bean package 1-2 minutes before cooking is completed. Add salt and pepper to taste.

Makes 3 qts - Serves 14-16
