Chicken stock may be purchased rather than homemade- we buy Costco's organic stock, or use some from the store. Typically one regular sized container of stock is enough for this dish.
Saute chopped onion in olive oil until translucent. Add mixture of quinoa, brown rice, and aramanth grains. Heat grains in onion/oil mixture for 2-3 minutes. Add one cup of chicken stock. Cook down, until stock is absorbed, add another cup or two. Repeat until all stock is absorbed into the grains, approximately 25 minutes. Salt and pepper to taste.
