I sat down with the manager of the local Chuy's and she gave me the portion sizes.Fajita meat--4 oz chopped chicken, 4 oz chopped beefPico de gallo (onion-red and white, tomato, cilantro, jalapeno)--1/4 cupGuacamole (with cilantro, tomatoes, and onion)--1/2 cupShredded cheese--1/2 cupShredded lettuce--1/2 cup
Directions
Using pre-prepared ingredients, the Chuy's chef layered the ingredients in the following order: meat, cheese, jalapenos. Then he heated the plate until the cheese melted. Next, he added the lettuce, the guacamole, and sprinkled the pico de gallo over the whole plate.
