3 boneless, skinless chicken breasts3 T olive oil1 C onion chopped1 C red pepper chopped1 C green bell pepper chopped5 roasted roma tomatoes3 roasted cloves garlic2 oz. good quality green olives, pitts removedsalt and pepper to taste
sear chicken breasts in olive oil, then set aside.
saute onions and bell peppers until onions are translucent, then add tomatoes, olives and garlic and bring to a simmer.
add chicken breasts back to pan and place in a 375 degree oven for 25- 35 minutes until chicken is fully cooked.
