Summer Pudding

Ingredients
8-10 slices smooth wholemeal bread, crusts removed600g mixed berries0.5 cup blackcurrant juice1 tbsp honey
Directions
Line a 1 litre pudding basin with the bread, making sure they overlap.

Place the berries, juice and honey in a saucepan and heat until just warm. Tip into the lined basin, reserving a little of the juice.

Top the pudding with more slices of bread and pour over the remaining juices. Cover and refrigerate for 12 hours with a weight on top to press it. Turn out and slice!
