8 lg (275g) Cremini Mushrooms1/2 lg onion -- diced100g of fresh baby spinach -- torn3oz soft goat cheese2/3oz sun dried tomatoes -- diced1/2 c 1% milk(2) 16oz cartons of egg whites1 head of roasted garlic
In non-stick sautee pan, add onions and mushrooms. Cook until onions are translucent. Add spinach and cook until wilted. Place on plate to cool. In large bowl, add eggs, milk, and roasted garlic. Stir to combine. Add cooled mixture from plate (if you find that there is liquid, blot with a paper towel before adding to egg mixture). Pour into a deep dish pie plate that has been sprayed with Pam. Crumble cheese on top. Place in preheated 350 degree oven. Bake until center is set. Approx 1 hour. Cut into 8 wedges
