Roast Beef and Swiss Sandwich Bake

1 Tbsp. I Can't Believe It's Not Butter! Light1 cup chopped onion7 oz. can mushroom pieces and stems, drained2 cups Heart Smart Bisquick Mix1 cup almond milk, unsweetened2 Tbsp. yellow mustard2 egg whites8 oz. package thinly sliced cooked roast beef, chopped4 slices baby Swiss cheese
Preheat oven to 350 degrees. Spray an 8 inch square baking dish with cooking spray.
Melt butter in a large frying pan over medium heat. Add onion and cook for 3 minutes. Add mushrooms and cook for 2 minutes more. Set Aside.
In a medium bowl, stir Bisquick mix, milk, mustard and egg whites until blended. Pour half into prepared baking dish. Top with half the roast beef, all of the mushroom and onion mixture, and Swiss cheese. Top with remaining roast beef. Pour remaining batter over roast beef.
Bake uncovered 45 to 50 minutes or until deep golden brown and center is set. Let stand 5 minutes before serving.
