Broccoli Cheese Soup

1/2 cup butter1 onion, chopped2 cups chopped broccoli, cooked4 cups chicken broth1 (1 pound) loaf processed cheese food, cubed1 cup milk2 teaspoons minced garlic1/3 cup cornstarch
Chop and steam broccoli till tender.
In a stockpot, melt butter over medium heat.
Cook onion and garlic in butter until softened.
Stir in broccoli, and cover with 3 cups of chicken broth, bring to a low boil.
Reduce heat, and stir in cheese cubes until melted.
In a small bowl, stir cornstarch into last cup of chicken broth until dissolved.
Stir into soup; cook, stirring frequently, until thick.
Serving Size: Makes 12 1 cup servings
