15 Bean Ham and Veggie Stew

1.5 Cups 15 Bean dry bean mix1 C. canned tomatoes6 C. spicy tomato juice1 onion, diced1/4 head of celery, diced2 medium carrots, diced4 cloves garlic, minced2 C. chopped fresh cabbage1/2 C. minced smoked hamseveral fresh sage leaves1 bay leafoptional chili powder to taste
Soak the dry beans in water or broth overnight.
Dice the veggies, garlic, and ham. Start to saute on low with a tiny bit of olive oil, stirring. When they begin to sweat a little and get fragrant, add the rest of the ingredients and simmer for four hours or longer until the beans are tender, or put in a slow cooker for longer time span.
Serving Size: Around 16 hearty bowls full
