Cauliflower Fritters

Ingredients
4 cups steamed cauliflower (roughly chopped)1 clove garlic, crushed or 1/8 tsp garlic powder1/2 cup flour1 egg1/4 shredded, fat free cheddar cheese1/4 cup hot waterdash of salt and pepper2 tbsp vegetable oil
Directions
In a large bowl, combine cauliflower, flour, garlic, egg, cheese, salt and pepper. Add water so that the batter becomes slightly denser than pancake batter.

On medium-low heat, add 1 tbsp of oil in a 10 inch skillet, coating the bottom of the pan. Use 1/3 cup measuring cup to form the fritters. Cook until golden brown, turn and cook another few minutes. Add a little more oil to the pan, and repeat with the remaining batter.
