2 Large Green Peppers 6 Large Green Onions (or about 7 Scallions)Bunch if Celery (Approx. 12 Large Stalks) 4 large Carrots Cleaned and peeled12 Medium Sized Mushrooms Cleaned and cut into bite size pieces1 Cabbage, fresh Peel the outer leaves away from the head and cut into bite size pieces. 2 28oz Cans Diced Tomatoes 48oz Can of V8 Low Sodium 100% Vegetable Juice1 Lipton Recipe Secrets Beefy Onion Soup & Dip Mix Pouch2 Beef Bullion CubesSalt, Pepper, Garlic Powder, Curry Powdery (if you desire spicy) to taste as preferred.
Clean and cut all vegetables into bite size pieces. In the same pot your going to cook the soup in, add a little cooking spray and Cook onions for 4-6 minutes until semi transparent. Add Green peppers and cook about another 2 minutes, while tossing. Add bite size pieces of cabbage and cook down a bit while tossings to mix with onions and pepper. Now add in the remaining veggies (carrots, mushrooms, celery), Now you can add in the cans of diced tomatoes and the V8. Onion Soup seasoning, Beef Bullion and or other seasoning to taste. Put lid on and allow to simmer on low for about 2 hours.
