Whole wheat and spelt blueberry pancakes

Ingredients
1/2 c. spelt flour1/2 c. whole wheat flour1c frozen wild blueberries1 c. non fat milk1 T vinegar1/2 t baking soda1/2 t baking powder1/4 c. egg beaters
Directions
Sift together dry ingredients. Lightly whisk the milk, egg substitute and vinegar. Spray a griddle with olive oil and heat to medium high. Mix dry and wet ingredients just until the flour is moist. Pour 1/3 c batter onto the griggle and sprinkle with bluebarries. The cakes are more like flap jacks because spelt absorbs water quite readily. Flip them over when the edges look dry.
