Baked Eggplant curry

Ingredients
Eggplant, fresh, 500 grams *Cooking Spray, Pam Cooking Spray, 50 gram *Bob's Red Mill Chana Dal Beans (1/2 cup dry)-2 tbsp *Urad Dal- 1 tbsp *Coriander seed, .5 tbsp *Cumin seed, .25 tbsp *Red Chillies (1 chillie), 2 Turmeric, ground, .5 tsp Salt, 1 tsp
Directions
Dry roast all the ingredients except eggplant. After they cool down, grind them into a powder.

Chop the eggplants as u like and put in a baking dish, mix the powder and add some PAM spray and a little bit of water and bake at 400F for 45min.
