Onions - 4 cupsPotato - 1 cupOlive Oil - 3 TbsSalt - 1 tsp16 egg whites, 4 whole eggs (mix in a bowl)Spices to taste, but I like to use this combo:1/4 tsp of ceyenne pepper ( you can use fresh if you like)1/2 tsp of turmeric powder1/2 tsp of garam masala
Saute onions and potatoes with salt on medium heat until potatoes are done make sure you cover this while cooking. Then add all spices and a cover for another minute to let the spices flavor come through. Turn the heat up on the stove and add cilantro and mix, then add the egg mixture to scramble the eggs until done.
(the egg whites and whole eggs needs to mixed separately, make sure you break the yolk and mix well before putting into sauteed onions and potatoes)
