Japanese shrimp and tofu mini-burgers (tsukune, per patty)

Ingredients
1 1/2 lbs shrimp, ez-peel1 block (12.5 oz) firm tofu2 Tbsp sake4 shiitake mushrooms2 large eggs1/4 c soy sauce1/4 c cornstarch4 green onions1 Tbsp ginger1 tsp saltcanola oil for pan-frying
Directions
Precook chopped tofu in boiling water for 3 minutes, drain, then blot in dish towel to remove extra water. Combine all ingredients in food processor.
Form into small balls and pan-fry.
