1 lb. dry lentils8 oz. chicken breast. cuts into strips1 cup diced celery1 cup shredded carrots1 medium onion, chopped4-5 cloves garlic, minced1-2 cups kale, shredded1 jalapeno pepper, chopped (optional)Cumin, to tasteRed Pepper Flakes,to tasteSalt & Pepper, to taste
Put 8-12 cups water in stock pot on high heat. Add diced celery, carrots, onion, garlic, and jalapeno pepper. After 5 minutes, add the dry lentils, chicken breast strips and spices. After the foam of the lentils has boiled away, cover with the lid and turn the heat down to medium-low. Add-in the chopped kale. Simmer ingredients together for 30 minutes.
