Hungry Girl Tiny Taco Salads

12 small square wonton wrappers1 cup cooked ground turkey1/2 cup fat-free refried beans1 tsp taco seasoning1 1/2 cups shredded lettuce1/2 cup reduced-fat shredded cheese1 tbsp sliced black olives chopped6 tbsp chunky salsa2 tbsp reduced-fat sour cream
350 degree oven.
Spary a 12-cup muffin pan with nonstick spay. Place each wonton wrapper into a cup and press it into the bottom. Lightly spray wrappers with nonstick spray.
Bake 8 minutes. Cool, then place on a plate.
In a microwave bowl, combine turkey, beans and taco seasoning. Microwave for 1 1.2 minutes or until hot. Stir well and set aside.
Evenly distribute shredded lettuce among wonton shells, 2 tbsp each. Top lettuce with turkey mixture, then cheese and olives. Finish each mini taco salad with 1/2 tbsp salsa and 1/2 tsp sour cream.
Serving Size: 6 servings (2 tacos salads)
