Low Sodium Beef Stew

1 cup onion diced1 Tbs minced garlic1 cup diced celery1 cup quarterd mushrooms1 lb cubed beef sirloin1 cup red wine2 Tbs olive oil4 cups low sodium vegetable broth (Pacific organic)3 cups chopped red potatoes2 cups chopped carrots1/2 tsp black pepper1 bay leaf
Put broth in crock pot. Add pepper, bay leaf, potatoes and carrots. Saute onions, garlic, celery and mushrooms in 1 Tbs olive oil and add to pot. Using the same skillet, brown beef in 1 Tbs olive oil. When browned, mix in wine and then add to pot. Cook on high until it bubbles and then turn down to low. cook for 5 or more hours. Enjoy a healthy meal. ;-)
