Egg Rolls

1 lb. Ground beef1 lb. Jimmy Dean Hot Sausage1 tsp. Pepper1 Tbs. Garlic salt2 tsp. Onion powder1 tsp. Salt10 c. chopped cabbage (I used half green and half red)1 c. bean thread (Cellophane Noodles), choppedCanola oil for frying
Cook and mix meat; add seasonings. Mix in cabbage and bean thread. Wrap in egg roll wrappers (use water on the edges of the wrapper to seal). It's about 1/4 cup mix per wrapper. Fry (I fry mine in a large skillet filled with hot canola oil).
Please note: the amount of canola oil in the nutrition info is an approximation. I estimated 1 tablespoon of oil per egg roll (it adds up to about 2 1/4 cup oil being absorbed during the cooking process). The amount of oil will vary somewhat; and generally, cooking faster and at higher heats seems to mean less oil absorption in the final egg roll. Unfortunately, I don't know a way of making good egg rolls that doesn't involve frying them. :p
You could make the filling a bit healthier by substituting turkey sausage for the pork sausage.
