20 oz ground turkey2 tsp garlic powder2 tsp cumin powder (for meatballs) - I also added some to the soup2 cups chopped cabbage2 cans diced tomatoes3 cloves garlic2 jalepeno peppers choppedbunch chopped cilantro (for garnish or added to soup during cooking)3 tablespoons better than bullion chicken9 cubes knorr chipotle bullion8 cups water
Mix ground turkey w/cumin and garlic powder
roll into balls and cook in a skillet - spray pan with a little pam. To not distort shape of meetballs, I covered the pan with a lid and let them "steam" a bit to hold their shape
In a stockpot, spray a bit of pam and saute onions, jalepeno (seeds removed for less heat) & garlic until slightly tender - add cabbage, diced tomatoes, 8 cups of water, chipotle bullion and some chicken bullion too. You could sub the chicken bullion w/reduced sodium chicken broth to cut the sodium content. Add in cooked meatballs, bring to slight boil, reduce heat and simmer for about 1/2 hour
garnish with cilantro
