Vanilla Pudding

Ingredients
Granulated Sugar, .75 cupGranulated Sugar, 6 tspCornstarch, .1875 cupSalt, .25 tspEgg, fresh, 2 largeEgg Yolk, 1 large*Coconut Milk, 2 cupCoconut Oil, 3 tbspVanilla Extract, .5 tsp
Directions
Whisk Sugar, Cornstarch, Salt, Eggs, and Coconut Milk together on stove top
Turn heat to Med-Low
Cook, stirring constantly, until 172-180 degrees F
Add Oil a bit a a time, then add vanilla extract
Cover with parchment to prevent skin
Refrigerate 2 hours or until less than 45 degrees F
Serve with Vanilla Wafers and Banana slices
