Coconut Milk Rice Pudding with Tart Cherries

Ingredients
3 cups cooked basmati or other white rice2 cans light coconut milk (28 oz)2/3 c. sugar1/3 c tart cherries1/2 teaspoon cinnamon2 eggs1-2 T butter1 tsp vanilla extract
Directions
put leftover rice in slow cooker or saucepan on low with 2 cans coconut milk, sugar, cherries and cinnamon - cook down until almost all liquid absorbed. At end, add two beaten eggs and stir constantly for two minutes. Turn off heat and add butter and vanilla. serve warm.
