Black Bean and Vegetable Soup

Olive Oil1 medium onion chopped3 stalks celery chopped3 large carrots chopped1 28 oz. Can of diced tomatoes2 14 oz cans Black Beans1 tbs. Oregano2 tbs. Chili PowderSalt and Pepper to tasteCilantro & Lime
Heat oil in medium stock pot. Add onions, celery and carrots and cook until slightly soft.
Add Oregano and Chili powder to vegetables, stir to mix.
Add tomatoes and black beans. Bring to to a boil then reduce heat to simmer. Ready in 30 minutes but great the next day.
Garnish with chopped cilantro and lime on top. If you aren't concerned about calories, you can also top with a tbs. of grated cheese, sour cream, tortilla chips, etc.
Serving Size: Makes 8 one cup servings
