Kale Salad with Spicy Peanut Dressing

Ingredients
Kale, 8 cup, chopped finelyCarrots, raw, 1 cup, gratedPeanuts, dry-roasted, 6 TBSOlive Oil, 2 tbspCider Vinegar, 2 tbspBrown Sugar, 1 tsp packedSalt, .25 tspPeppers, sweet, red, raw, sliced, 1 cupPepper, red flakes, .5 tsp
Directions
Take one bunch of kale, wash, remove the ribs and chop finely. Shred one to two carrots to make one cup. Toss together with 3 TBS of peanuts.
In a separate bowl mix togehter all the other ingredients and blend in a small food processor. You may also crush the peanuts and red pepper flakes in a mortar and pestle and stir into the liquid.

Toss all the ingredients together and let the salad sit for at least several minutes before serving. The longer it sits the better it tastes!
