Chicken Croquettes

Thick white sauce 1/4 cup margarine 1/4 cup flour 1/4 tsp salt 1/8 tsp pepper 1 cup milkCroquettes 1 cup thick white sauce2 cups ground or finely chopped chicken (can use any meat)1 tbsp minced onion1 tsp parsleySalt & pepper to tasteOptional Not included in recipe1 8 oz package of frozen peas in cream sauce1 tsp minced onion
Prepare Thick White Sauce, Stir in meat, 1 tbsp minced onion, and the parsley. Season with salt and pepper. Put mixture in bowl, cover and chill 2-3 hours (if use oblong pan will not need to use another dish later)
Dived mixture into 12 equal parts, shape each into a ball. Beat egg and wanter untl blended. Dip each ball into egg mixture, then roll in bread crumbs until compleatly coated. Cover and chill at least 2 hours.
Heat oil (3-4 inches) to 365 degrees i deep fat fryer or kettle. Fry croquettes in oil 1 1/2 to 2 minutes or until light brown. ( Handle croquettes carefully so crust in not puctured), I use a serving spoon to turn them. Drai, keep croquettes warm in 350 degree oven until serving time.
Prepare peas as directed on package except add minced onio before cooking.
To serve, spoon hot peas in cream sauce over croquettes.
