Subzis (Indian Vegetables)

Ingredients
3 small or medium golden potatoes (cooked)3/4 tbsp Garam Masala.75" ginger (peeled) and cut up1/2 onion minced1tsp salt (or more for taste).75 tbsp mustard seeds 1.5 cut medium red tomatoes (with seeds removed).5 cups of peas (cooked)1tbsp turmeric3 handfulls of spinach
Directions
-Wrap the golden potatoes (already washed) in wet paper towels and microwave until cooked (not too mushy).
-cut up potatoes in big chunks
-in skillet, put olive oil, add spices, and some of turmeric
-add the garlic, ginger, and onions to the skillet
-when the onions start to brown, add the spinach
-as the spinach starts to cook, add the peas, potatoes, and tomatoes, along with the turmeric and salt
