Kalyn's Stuffed Cabbage Casserole

2 tsp olive oil1 lb. lean ground beef1 cup diced onions1 T minced garlic, or Lowry's Garlic Salt1/2 tsp thyme1 tsp paprika1/2 to 1 head cabbage, chopped and slightly cooked1 can petite tomatoes1 cup tomato sauce1/4 cup water2 cups cooked brown rice1-2 cups low-fat mozzarella
Preheat oven to 350. Spray a square casserole pan with non-stick spray. Heat large skillet and brown beef and onion. Use 1 tsp of the olive oil if meat is very lean. Season with garlic or garlic salt, thyme, paprika, black pepper. Add the tomatoes and tomato sauce; simmer until slightly thickened. While it simmers, chop cabbage and saute in 1 tsp olive oil. Cook over medium high heat until wilted and about half-cooked. Add the rice to the meat mixture. In casserole dish, layer half the cabbage, half the rice/meat mixture, cabbage again and meat again. If the tomato/rice/meat mixture seems thick, add the water. Cover tightly with foil and bake for 40 minutes or until mixture is bubbling on the edges. Remove foil; sprinkle cheese on top and bake until cheese is melted and starting to brown. (15-20 minutes).
