Cheesy Mashed Cauliflower

1 head cauliflower, chopped2 tbsp butter2 oz Fage 0% Greek Yogurt (or sour cream)1 oz heavy whipping cream3 oz cheddar cheese, shredded
Boil the chopped cauliflower until it's soft. (Takes me 25-35 minutes, usually). Drain well.
Preheat oven to 375.
While cauliflower is still hot, dump half of the cauliflower into your food processor, with 1/2 of the butter, yogurt, & heavy cream. Blend until smooth.
Scrape into a pie pan or pyrex dish.
Repeat with second half of cauliflower, butter, yogurt, and whipping cream.
Sprinkle cheddar cheese over top of cauliflower & heat in oven for 10-15 minutes. Until cheese is bubbly & starting to brown.
