2 tablespoons olive oil1.5 cup shredded roast chicken1 large onion, chopped2 jalapenos, diced (seeded for milder taste)2 cans cannellini beans, drained and rinsed2 cans chicken broth (reduced sodium)Cheese, tortilla strips, and/or sour cream for garnish
1. In a large pot heat oil over medium-high heat. Add onions and jalapenos; and cook till soft, 3 minutes.
2. Add cannellini beans and chicken broth; bring to boil.
3. Add shredded chicken, bring to a boil again.
4. Reduce heat; simmer until thick, 15 to 20 minutes.
