Low-Fat Meatloaf

Ingredients
1 pound lean ground beef1 egg1 tsp olive oil1/4 cup celery1/4 cup onion1/4 cup red bell pepper1/2 plum tomato4 tsp. Worcestershire Sauce1/4 cup breadcrumbs
Directions
Dice all the vegetables and saute in the olive oil. Mix the ground beef, egg, worcestershire and breadcrumbs together with the cooled vegetable mix. Season with salt and pepper. I use a 6 cup muffin tin and pre-portion the meat mixture into the cups. Top each with some tomato sauce and bake in a 350 degree oven for 30 minutes. You can add some fresh herbs if you prefer.
