Single Crust Turkey Pot Pie

3 stalks celery, chopped6 baby carrots, chopped1 sweet potato, chopped1/2 med. onion, chopped1 med. zucchini, chopped1 TBS. olive oil1 cup chopped cooked turkey1 jar turkey gravy1/2 tsp. pepper1/2 tsp. garlic powder1 tsp. dried sage1 refrigerated pie crust
Preheat oven to 350.
In a saucepan, combine the vegetables and olive oil and saute briefly until they begin to turn tender.
Add gravy and turkey. Simmer for 5-10 minutes. Spray a pie plate with cooking spray. Add saucepan ingredients. Place pie crust on top and crimp the edges. Bake for 35-45 minutes. Melt margarine and brush on the pie crust at the last few minutes of baking. Pull out of oven and let stand for 5 minutes.
