Italian-Style Chicken Noodle Soup

Ingredients
1 tsp EVOO1 large onion chopped finely1 cup grated carrots1 tsp minced garlicsalt and pepper8 cups 99% FF Chicken Broth1 can diced tomatoes1 can garbanzo beans - drained & rinsed1 can red kidney beans - drained & rinsed8 oz. Tyson grilled chicken breast strips - chopped8 oz dry whole wheat penne pasta10 oz frozen mixed soup vegetables2-3 handfuls of fresh spinach1 tsp Italian Seasoning
Directions
Saute onion, garlic and carrots in olive oil till tender. Add broth, vegetables, beans and chicken. Add seasonings. Bring to boil, add penne and lower to med-high heat. Cook till penne is done. Throw in fresh spinach and stir until wilted. Ladel into bowls and garnish with croutons and grated parmesan cheese. Excellent!
