Creamy Carrot & Cauliflower Soup

Ingredients
1 large head cauliflower cut into florets4 large carrots peeled & chopped6 cups of water1/2 cup of red onion chopped1 tsp garlic powder1 tsp ginger1 tsp Mrs Dash Lemon Pepper BlendSalt to taste
Directions
In large pot bring water to boil, add carrots, cover & cook for 5 min. Add cauliflower and re-cover, cook for 8 more min until almost tender. Add onions, garlic, ginger and cook an additional 5 minutes until onions begin to get clear. Remove from heat. Puree with blender until creamy. Add salt to taste. (save a few cauliflower florets for texture if you prefer) Enjoy!
