Chicken Sausage Shrimp Gumbo

24 Oz smoked sausage sliced1 lb raw shrimp6 chicken wings (cut in two pieces)1 large or (1 cup chopped onion)1 large or ( 1 cup chopped each green and red bell pepper)2 tablespoons garlic1 large bunch of shallots-chopped1/2 pkg gumbo base3 tablespoons or (1/3 cup chopped parsley)3 large bay leaves (crumbled)1 - 10.5 oz can beef broth48 oz chicken broth
In a large stock pot cook sliced smoked sausage until it is brown on both side. Drain fat, add vegetables (onion, bell peppers, garlic, shallots, celery, parsley). Cook vegetables until they loose color, add gumbo base (this is the thickener-it is like using roux). Mix well, add chicken wings and cook for about 10 minutes. To this mixture add chicken broth, beef broth, and bay leaf. Simmer for 30 minutes making sure that chicken is done. Add shrimp and simmer for 5 additional minutes.
(Be careful to skim to remove any excess fat that may have been rendered during cooking)
Serve over a bed of hot white or brown rice.
