Quinoa Granola

2.5 cups large flake rolled oats3/4 cup whole almonds1/2 cup pumpkin seeds1/2 cup sunflower seeds2 tbsp sesame seeds2 tbsp flax seeds1/3 cup quinoa (uncooked)1/4 cup flaked unsweetened coconut1/4 cup walnut pieces, broken1 cup pure maple syrup1 tsp vanilla extract2 tsp ground cinnamon1/4 cup dried cranberries1/4 dried goji berries1/4 cup raisins
Measure oats through walnuts into a large bowl, mix well.
Combine maple syrup and vanilla. Pour over oat mixture. Mix well. Sprinkle on the cinnamon, stir until blended.
Spread the granola evenly on a large baking sheet and bake at 225 F or 105 C for 1 hour.
Remove and set aside to cool. Mix in remaining dried fruit. Store in a sealed container for up to 4 weeks.
Serving Size: Makes 7 cups, each serving 1/2 cup.
