1 tbsp chopped onions4 cups fresh spinach leaves2 egg whites1 egg1 oz low fat feta cheese1/3 tsp olive oilseason to taste
Saute spinach and onions till onions translucent in 1/3 tsp olive oil. Add scrambled egg whites and egg and cook until eggs are set. Add 1 oz low fat feta cheese, cover with lid and turn off heat, allow chees to melt.
