Tortellini soup

Ingredients
1 lb hot or mild italian sausages (casings removed)1 large onion, chopped2 carrots, peeled and chopped4 cups beef broth1\2 tsp italian herb seasoning1\2 tsp salt1\4 pepper1 small can(8oz) tomato sauce1 large can(10 oz) tomatoes in juice, chopped2 cups sliced fresh mushrooms1 small pkg (10 oz) cheese tortellini4 tbsp parsley2 tbsp Parmesan cheese(I add 2 tbsp of garlic chili sauce for extra taste)
Directions
In skillet over medium-high heat, cook sausage til browned, stirring to break up meat. Transfer to slow cooker. Add onion,carrots, broth, seasonings, tomato sauce , tomatoes and mushrooms.

Cover and cook on High- 3-4 hours or on Low 6-10 hours , or until vegetables are tender.

Cook tortellini separately and add to the cooked soup + the garlic chili sauce and Parmesan cheese. Reheat through and spoon in bowls .

    This is very tasty. I used 98% fat free italian seasoned turkey instead of the sausage. Also, I would suggest keeping the tortellini out until the last 20 mins or so (until they are cooked through) because they get really mushy! - 1/29/08
