Skinny Baked Potato Soup

2 slices bacon2 small onions, chopped4 c. chicken broth3 medium potatoes, diced large1 c. skim milk
Cook bacon in a large saucepan. Remove bacon from pan and add chopped onions. Cook about 5 minutes or until softened. Add the chicken broth and bring to a boil. Reduce heat to medium. Add the potatoes and cook until tender, about 15 minutes. Stir in 1 c. skim milk.
Measure out 2 cups of the soup--heavy on the potatoes--and puree it in a food processor. Add the pureed mixture back to the soup and heat and stir until slightly thickened.
