Everything Minestrone (adapted from Happy Herbivore)

1 small onion, diced5 cloves of garlic, minced1tbsp red pepper flakes4 cups low sodium vegetable broth3 medium carrots, chopped1 medium zucchini, chopped1 medium summer squash, chopped3 medium stalks of celery, chopped2 tbsp red wine vinegar2 tbsp Italian seasoning1 28 oz can Wegmans Crushed Tomatoes1 14 oz can Hunts Diced Fire Roasted tomatoes1 8 oz can Hunts No Salt Added Tomato sauce
Saute onion and garlic over medium heat in a large pot lined with water. Add red pepper flakes and Italian seasoning, continue to saute until fragrant.
Add the remainder of the ingredients, starting with the broth. Stir and bring to a boil, then reduce heat to low and simmer for 20 minutes.
Add cooked beans or rice (optional).
