Chicken, Orzo and Spinach casserole

2 large chicken breasts, boneless, skinless1 c. uncooked orzo1 8oz. package of sliced fresh mushroomsvegetable cooking spray1 bouillon cube1 16 oz package of frozen spinach1 10 1/2 oz. can reduced fat cream of mushroom soup1/2 c. reduced fat mayonnaise2 T. lemon juice3/4 c. shredded reduced fat sharp cheese1/4 c. Italian bread crumbs1/2 t. basil
Boil chicken in water to cover till done. Add bouillon cube to water. Remove chicken, chop and set aside. Cook orzo in reserved broth till done. Drain orzo. Reserve 1 c. of liquid. Add pasta and liquid back to pot. Saute mushrooms in nonstick pan coated in vegetable cooking spray till soft. Add chicken, spinach soup, may, lemon juice and basil to orzo. Mix. Spray 9 x 13 pan with cooking spray. Spoon mixture into dish and top with cheese and bread crumbs. Bake at 350 for 30 minutes.
