Vita-Mix Spicy Butternut Squash Soup

1 cup butternut squash, cubed3/4 cup veggie broth2/3 cup milk2 tbsp. and sour cream2 tbsp. onions, chopped1/4 of a chipotle pepper (or, if you're not into spicy, 1/2 tsp. chili powder)
Heat the broth and squash in the microwave for three minutes.
Add all ingredients to your Vitamix and turn it to Variable 1. Quickly turn the speed to 10, then High, and blend for 5 minutes or until good and steamy.
Top with a little cheddar cheese, if desired.
Serving Size: Makes 2 1/2 cups of soup
