Spaghetti Squash Pie

2 cups cooked spaghetti squash1 large egg, beaten1 cup cottage cheese1 (10 oz) package frozen spinach, thawed and drained3 garlic cloves, minced1 TBSP dried basil1 cup Spaghetti sauce1 (5 oz) package hard parmesan cheese1 cup sliced mushrooms cooking spray
1. Combine spaghetti squash and egg.
2. Place in a pie pan that has been sprayed with cooking spray.
3. Bake in 350 degree oven for about 10 minutes.
4. Meanwhile, drain some of the excess liquid off cottage cheese. Add dried basil to cottage cheese.
5. Saute mushrooms with garlic.
6. Shred parmesan with a peeler.
7. After spaghetti squash has cooked for about 10 minutes, pull it out and top with cottage cheese, spinach, mushrooms, spaghetti sauce and parmesan cheese.
8. Bake about 30 minutes or until heated through.
Serving Size: Makes 1 pie (4 servings)
