Turkey Noodle Soup

8 oz Turkey breast meat diced 8 oz of Turkey leg/thigh meat diced 2 Medium Potatoes peeled and diced3 Carrots peeled and diced1 Medium Onion Diced3 Stalks Celery diced1 can Green Beans or 6 oz frozen Green Beans1 cup Frozen Green Peas1 cup Frozen yellow corn1 Tbsp Unsalted Butter4 cups Chicken Broth or Turkey stock1/2 tsp Salt 1 tsp Black Pepper1 1/2 tsp ground sage6 tsp fresh Thyme
1) Take meat off bone of you leftover Holiday Turkey. Use equal amounts of white and dark meat.
2) Peel and dice Potatoes
3) Peel and dice Carrots
4) Dice Celery
5) Dice Onion
6) In 5 Qt heavy bottom pot melt butter ,
7) Carrots, Onions and celery and cook over medium heat until tender and translucent.
8) Add remaining ingredients EXCEPT the Turkey and Noodles. Bring to boil then reduce heat and simmer 25 min.
9) Add Turkey and Noodles and let simmer for 30 minutes more.
Serving Size: Makes 8, 1 1/2 Cup servings
