Bourbon Chicken for Canning

Ingredients
Directions
2 lbs chicken cut in bite sized pieces.2 tablespoons oil1 clove crushed garlic1 teaspoon crushed red pepper1/4 cup apple or orange juice (apple is traditional, I used orange)1/3 cup light brown sugar2 tablespoons ketchup1 tablespoon cider vinegar1/2 cup water1/3 cup soy sauce
Combine all but chicken and oil in pan and bring to a boil.
Stir fry chicken until lightly browned in the oil.
Divide the chicken evenly in jars and add sauce.
If you do not have enough sauce add juice or water to the fill line.
Pressure can for 75 minutes for 1000 foot and under altitude.
Serving Size: Makes 6 servings (2 per pint jar)
