Elana Amsterdam's Paleo Bread

Ingredients
1 1/2 Cups blanched almond meal2 Tbsp coconut flour (desiccated coconut)1/4 Cup golden flaxseed meal 1/4 tsp celtic sea salt1 1/2 tsps baking soda5 eggs1/4 Cup coconut oil1 Tbsp honey1 Tbsp apple cider vinegar
Directions
Place dry ingredients in food processor; pulse together Pulse in eggs, oil, honey and vinegar. Pour batter into a greased 7.5 x 3.5 Magic Line Loaf Pan. Bake at 350 for 30 minutes. Cool and serve.

Serving Size: Makes 1 small loaf - estimated 20 slices

    It tasted of too much baking soda so I checked the recipe Elana has on her website. Sure enough it calls for only 1/2t baking soda! I ended up with an uncooked center despite using a slightly larger pan than the recipe calls for. I will make this again to accommodate my oven as I think it has pot - 5/17/16
